Canoe runs one of the most quietly ambitious kitchens in the country — a restaurant that treats Canadian terroir the way a great French room treats its regions. High in the TD Bank Tower, it pairs a horizon of lake and skyline with cooking that stays loyal to the land far below.
Terroir on the plate
Under executive chef Ron McKinlay, the Oliver & Bonacini flagship works hand-in-hand with farmers and foragers across the provinces. The menu shifts with the season and reads like a map of the country — game from the interior, fish from both coasts, grain and orchard fruit from Ontario.
Cuisine
Signatures move between comfort and precision: crispy pork jowl with Ontario rhubarb and baby beetroot, wild Pacific halibut with Savoy cabbage and champagne cream, nose-to-tail Tamarack Farms lamb, venison and foie gras in season. Desserts stay Canadian too, from caramelized honey cake to the warm Canoe brioche with brown butter.
The Room
The dining room was reimagined to echo its subject: overhead, a mirror-and-lens piece catches the light; chandeliers are bundled like firewood; woven felt recalls the canoe and the snowshoe; copper warms the wall of glass. An open kitchen and a Chef’s Rail put the craft on show.
