Baro: a modern pan-Latin kitchen with a taste for the theatrical
Behind Baro’s King West glamour is a genuinely ambitious Latin kitchen. Chef Steve Gonzalez draws a menu across Central and South America — Peruvian ceviche, Mexican grill, Caribbean brightness — and plates it for the middle of the table, where a Latin dinner belongs.
The concept
“Baro” is short for barrio, neighbourhood, and the cooking keeps that communal spirit: traditional dishes reimagined with modern technique and served to share. It is a room that takes its food as seriously as its atmosphere, which is why it has stayed a King West fixture rather than a passing scene.
What to order
The ceviche list is the signature — try the Nikkei hamachi in yuzu-ponzu with edamame, lotus root and nori, or the scallop aguachile with aji amarillo, pomelo and grapefruit. Follow with charcoal-grilled meats, tacos and empanadas, and let a round of pisco sours and Latin-leaning cocktails carry the evening.
The space
The multi-level room layers concrete and warm wood with hanging greenery and low neon: a lively main dining floor, a raw bar upstairs, a loft and a rooftop patio for summer nights. It is polished but unbuttoned — dressed for a celebration, built for a long table.
Who it’s for
Group dinners and celebrations, friends who order for the whole table, and anyone who wants serious Latin cooking without a hushed, formal room.
Questions and answers
What kind of food is it? Modern pan-Latin — ceviche, charcoal grill and shared plates drawing on Peru, Mexico and the Caribbean.
What’s the one thing to order? A couple of ceviches to start; they’re the kitchen’s calling card.
Is it good for a group celebration? Ideal — the sharing menu and multi-level space are made for birthdays and big tables.
Are there vegetarian options? Yes — plant-forward ceviche, grilled vegetables and sides sit alongside the meat and seafood.
Is it a quiet dinner spot? Not really — the mood is warm and lively; come for energy, and book early evening if you want to talk.
