A small roaster was installed in a corner of the back room and the coffee comes out under the caf\u00e9&#8217;s own sister label \u2014 which means the person who bakes your cinnamon bun is also, increasingly, the person who decided how your coffee was roasted. Very few caf\u00e9s in the city control both ends of that; almost none do it in a room this size.<\/p>\n<p>The signature drink is a cardamom latte \u2014 espresso, milk, cardamom, a little sweetness and mint \u2014 and it is the clearest expression of what the caf\u00e9 is doing, because cardamom is the flavour of Swedish baking and it arrives here in a glass rather than on a plate. It has since passed to Yadi Arifin, who is the reason to talk about the caf\u00e9 in the present tense.<\/p>\n<p>Arifin trained in baking at George Brown College and spent his career in serious hotel pastry kitchens \u2014 five years at the Fairmont Royal York in Toronto and two at Chateau Lake Louise in the Rockies \u2014 before leaving the industry, doing something else entirely, and then coming back to open a caf\u00e9 on his own terms. He researched it the way a chef would: attending coffee events, travelling to New York to work out what a caf\u00e9 could be, and settling on consistency as the thing that actually distinguishes a good room from a pretty one.<\/p>\n<p>Then he did something unusual for a pastry chef: he started competing on the coffee side. He won the Toronto AeroPress championship and, at his first national barista competition, placed eighth in the country. The real constraint is not policy but chairs: this is a converted house, seating is limited, and at busy hours finding a table takes patience. It is a century-old Kensington house rather than a commercial unit, and the caf\u00e9 has been fitted into it rather than over it: exposed brick, original beams overhead, pale Scandinavian furniture, and enough windows that the front rooms stay bright through the day. The Swedish theme is carried lightly \u2014 a Dala horse in the branding, Nordic restraint in the furniture \u2014 rather than laid on as decoration.<\/p>\n<p>There are effectively three places to sit, and they are genuinely different. The front is the caf\u00e9 proper, closest to the counter and the noise of the market. The back room is the quiet one, with an entire wall given over to old books; it is the seat people come specifically for. And behind the house there is a walled garden patio, secluded from the market entirely, which in summer is the best seat in the building and the hardest to get.<\/p>\n<p>The honest limitation is capacity. A house has small rooms, and small rooms fill. At weekend peaks the caf\u00e9 is at its limits and the search for a table is real \u2014 that is the price of the format, and the reason regulars come at the quiet edges of the day.<\/p>\n<h2><span class=\"ez-toc-section\" id=\"Beyond_coffee\"><\/span>Beyond coffee<span class=\"ez-toc-section-end\"><\/span><\/h2>\n<p>Everything sweet is baked in house, which for a caf\u00e9 this small is a serious commitment and is the single fact that separates FIKA from most of its neighbours. The core is Swedish: cinnamon buns made year-round to a proper recipe, and seasonal Nordic baking that follows the calendar \u2014 most notably semla, the cardamom bun filled with almond paste and cream that Swedes eat in the run-up to Lent, which appears here for its proper few weeks and then disappears. Brownies and squares fill out the counter and change with the kitchen&#8217;s mood.<\/p>\n<p>Savoury is light and Scandinavian in logic rather than a full menu: open-faced sandwiches and simple plates. Weekends are the opposite: Kensington fills up, the garden goes first and the queue is real. In summer the market runs car-free days that turn the whole neighbourhood into a street festival \u2014 wonderful to walk through, but the worst possible day to hunt for a table.
