Nakagome had worked at Manic Coffee and at Nad\u00e8ge Patisserie, and the Japanese roll cake he built the counter around is a French technique rewritten with less butter and less sugar, which is a harder thing to sell in North America than a croissant and was committed to anyway.<\/p>\n<p>This room is what happens when that partnership gets space. The group grew through downtown over the following years, and the corner it is named after gave the founders enough floor area to do something the earlier caf\u00e9s physically could not: run a coffee bar and a licensed evening operation out of the same kitchen and the same room. Glazing along the front pulls in daylight, and the lighting drops warmer as the day goes on.<\/p>\n<p>Seating is zoned rather than uniform, which is what makes the day-to-night trick possible: bar seats and small tables near the counter for coffee traffic, larger tables further in for groups and food, and softer corners for people who intend to stay. The counter is long enough that a queue at the espresso side does not block anyone eating, and there is a genuine bar rather than a coffee counter with bottles behind it.<\/p>\n<p>The honest trade-off is intimacy. A room this size cannot be cozy in the way the original NEO is \u2014 at busy hours it is a big, lively, hard-surfaced space, and when a band is playing it is a venue, not a reading room.
